I’ve honestly become quite spoiled by the amount of fantastic Italian food that exists in Hong Kong. Another new one that opened during the pandemic (in 2022) is Testina Hong Kong. Testina was created from a collaboration between a restaurant in Milan called Italy Tripe Milan and ZS Hospitality in Hong Kong (Feuille, Hansik Goo, Whey).

Testina’s uniqueness is its genuine focus on nose-to-tail dining, offering dishes prepared with calf tongue, beef tripe, chicken liver, chicken offal, bone marrow and pig’s head. Recommended in the Michelin Guide, the quality of the food is excellent, and it was certainly difficult to book when it first opened.

We started our meal with delicious tomato-filled focaccia, grissini (breadsticks) and plain bread.
Veal tongue tonnato was delicious, with super tender slices of tongue served with a tasty tuna sauce. This dish is usually made with regular veal, but I think the tongue takes it up a notch. [HKD298]
Lardo, Stracciatella di Burrata and figs were wonderful. The ingredients were very authentic and super fresh. [HKD288]
One dish that many people raved about was the “Trippa Fritta”, fried honeycomb beef tripe served with rosemary. [HKD198] For me, someone who has particularly enjoyed steamed Cantonese dim sum style, this was a very different and interesting take on the ingredient.
Pastas were delicious, and this homemade tagliatelle with chicken offal ragu was really tasty. [HKD248]

First Thoughts – Testina

Testina Hong Kong keeps prices reasonable while offering excellent quality Italian food. Our first visit was very nice and I would definitely come back again. Testina definitely has a warm and cozy atmosphere and the dishes are “homely” and creative at the same time. Offal is the star and is used prominently on the menu. However, if you don’t like offal, there are still plenty of options.
