Hey guys! If you are tired of the regular pav bhaji and want to give your family some vegetables, try this extremely tasty hariyali pav bhaji that is extremely easy to make and you can also make it for guests as a change from the regular pav bhaji. So let’s get cooking…

Ingredients:

  • Broccoli – 250 grams
  • String beans/Fanasi – 150 grams
  • Green peas/Vatana – 150 grams
  • Potatoes – 4 medium ones
  • Palak/Spinach – 1 large bundle
  • Peppers – 3 medium ones
  • Spring onions – 4 medium ones (with the green stem)
  • Coriander leaves – 1 cup
  • Ginger – 1 inch
  • Garlic – 5 to 6 cloves
  • Green chillies – 3 (if using spicy chillies and 4-5 if using the lighter green ones)
  • Tomatoes – 2 small
  • Roasted cumin powder – 2 tsp
  • Dhania powder/coriander powder – 2 tsp
  • Pav bhaji masala – 1 and 1/2 tbsp
  • Lemon juice – 2 tbsp
  • Salt to taste
  • Ghee and oil 1 tbsp each
  • Butter – 2 tbsp
  • Paneer (finely chopped) – 100 grams
  • Cheese grated for garnish
  • Asafoetida/Hing – 1/4 tsp
  • Cumin seeds/Jeera – 1 tsp

Method:

1) Cook green peas, green beans and potatoes together in a pressure cooker. After cooking, puree it and keep it aside. Take enough water in a bowl and bring it to a boil. Once it boils, add the palak, coriander leaves, ginger and garlic to it and let it cook for 2 minutes.

2) After 2 minutes, take out the palak mixture and to the same water add the broccoli and let it cook for 2 minutes (you can add more water if it feels less). Strain it and puree it.

3) Take the palak mixture and puree it in a mixer. Make a paste of the green chillies in the same way. Finely chop the spring onions and tomatoes (preferably in a chopper). Roast the peppers on the gas, chop them finely and store them.

4) Take the oil and ghee in a wok and let it heat up. Now add the hing and cumin seeds and let them crackle. Now add the green chili paste, capsicum and onions and cook for 2-3 minutes until soft. To this, add the tomatoes and then add the coriander powder, cumin powder, pav bhaji masala and a little salt and let it cook for 5 minutes until the mixture leaves oil.

5) Now add the palak puree to this and mix well and add a little salt again. (Add salt step by step for better results). Finally, add the pureed mixture of beans, peas, potatoes and broccoli and mix well. Add salt again. Add water to adjust the consistency. Puree this all together and continue to adjust the salt and water consistency as needed.

6) Now add the chopped paneer (you can grate the paneer and add it too, but I like its thick texture, that’s why I chopped it) to this and mix it well.

7) Finally, add the lemon juice and butter, mix well and turn off the gas. Serve hot with buttered pav and garnish with grated cheese.
