Ingredients

  • 3 tablespoons of olive oil

  • 1.25 pounds Dandy® Bag of celery sticks

  • 1 large onion, cut into 1/8-inch rings

  • 8 Oz. cream cheese, room temperature

  • 2 teaspoons soy sauce

  • 1 teaspoon smoked paprika powder

  • 1 teaspoon freshly ground pepper

Instructions

  1. Heat a large frying pan over medium heat, add the oil and heat until shimmering. Once hot, add the onion rings. Cook over medium heat for 15-20 minutes, stirring frequently. Continue stirring and cooking until the onion rings are soft and golden brown in color; remove from heat. Set aside to cool.
  2. Meanwhile, add the cream cheese to a medium bowl. Stir in the soy sauce, smoked paprika and black pepper. Put aside.
  3. The onion rings should be cool enough to handle and cut into fine cubes. Add the caramelized onions to the cream cheese mixture and stir to combine.
  4. To stuff the celery, use a knife and spread it over the celery channel, leaving a 1/2 inch space at the thicker end so you can pick it up easily.
  5. The leftover dip can be stored in an airtight container in the refrigerator for about a week.
