Will it chocolate? Taste Test: Tree Berries!?

A subscriber recently sent me a link to a video in which the maker used berries from the lime tree to make chocolate. They said it “tastes just like chocolate.” Of course, that means we have to try.

Cocoa beans are special. They contain the chocolatey taste, color and smell of chocolate. They also contain the magical cocoa butter, a fat that is solid at room temperature but melts in your mouth. All that needs to be added to coca beans is sugar for dark chocolate or milk powder plus sugar for milk chocolate. But are there any other seeds you can use to make used chocolate?

I did some research, bought a chocolate mill and started experimenting. Watch the video to see the results.

Recipes:
Pumpkin seeds
555 g roasted pumpkin seeds
185 g sugar
30 g cocoa butter

Carob
160 g roasted chunks
100 g cocoa butter

Linde
2/3 cup freeze-dried cocoa butter
1/4 cup sugar
All the berries I had collected and roasted.
