Chapati Upma, a delicious savory upma made with leftover roti. Roti is shredded into thin strips and then prepared with onion-tomato-mixed vegetable curry to make this delicious Chapati Upma. This upma is packed with vegetables and is a perfectly balanced meal for children’s lunch boxes. Whenever I have leftover roti, I like to make simple upma or noodles with the roti. For noodles we need soy sauce, red chili sauce and vinegar, but for upma it is very simple and quick to make. If your child doesn’t eat vegetables, we can just make it with onion-tomato and exclude the vegetables.
Tips for making Chapati Upma
- Roll the chapati tightly and cut the roti into slices. We can also simply tear the roti roughly.
- Cook the vegetables until they are soft but also a little crispy.
- Adjust the spices and masala powders according to your spice level.
- Add a handful of water after adding grated roti so that roti gets mixed nicely with vegetables.
- Roti already contains salt, so be sure to add salt as needed for the vegetables.

Take the leftover chapati/roti. Roll it up tightly and cut the chapati into slices. Keep the roti slices aside.

Heat oil in a pan. Add mustard seeds and cumin seeds. Let it splash.

Add onions and fry the onions until they are translucent. Add the ginger-garlic paste and fry together with the onions

When the onions are transparent, add the chopped tomato to the pan and stir well.

When the tomatoes are mushy, add the shredded cabbage, chopped carrots and peppers and mix well.

Now add turmeric powder, satay, red chili powder and coriander powder. Give a good mix.

Close the pan with a lid and let the vegetables cook and soften. Occasionally open the lid and mix the vegetables so that they do not burn.

When the vegetables are almost done, add the sliced roti.

Also add garam masala and some curry leaves. Add a handful of water and ensure a good mixture. Cover the pan with a lid and let everything cook for a few minutes.
