Ingredients:
– 250 g dried dates, pitted
– 200 g dried coconut, coarsely chopped
– 250 g clarified butter (ghee)
– 70 g almonds
– 70 g walnuts
– 50 g pistachios
– 30 g melon seeds
– 50 g raisins
– 15g-20g sesame seeds
– 150 g edible gum (gond)
– 50 grams of flour (besan)
– 50 g whole wheat flour (atta)
– 250 grams of cane sugar
– ½ teaspoon cardamom powder
– 1 teaspoon dried ginger powder (tube powder)
Steps for making Gond boy
1. Start by removing the seeds from the dried dates and dry roast them in a pan for two minutes. Put aside.
2. Dry roast the coarsely chopped desiccated coconut in a pan for 2-3 minutes or until it turns a light golden brown color.
3. Mix the dates and dried coconut in a blender and grind them in small quantities into a coarse powder.
4. Use 250 g clarified butter (ghee) for the entire recipe. Heat some ghee in a pan and roast the chopped almonds, walnuts, pistachios and melon seeds for 2-3 minutes until light golden brown and aromatic. Transfer them to a plate.
5. In the same pan, add more ghee and roast the raisins until they swell. Transfer them to a plate.
6. Dry roast sesame seeds for one minute. Place all the roasted nuts and seeds in a large bowl.
7. Grind edible gum into a coarse powder and boil it in batches with ghee for 3-4 minutes until it swells.
8. In the same pan, add 2-3 tablespoons of ghee and roast whole wheat flour and gram flour for 7-8 minutes on medium to low heat until aromatic and golden brown.
9. For the jaggery syrup, melt the chopped jaggery in ghee until completely melted. Make sure not to overcook the ladoos so that it does not become hard.
10. Mix all ingredients in a large bowl, together with cardamom powder and dried ginger powder. Mix well with a large spoon.
11. To shape the healthy winter special ladoos with dry fruits, take some mixture between your palms and shape medium sized ladoos. This recipe yields 23-24 ladoos.
12. Allow the ladoos to cool completely before storing in an airtight container for up to a month.
Recipe Notes:
– Feel free to use your choice of nuts in ladoos.
– If desired, you can grind the nuts coarsely to avoid nut pieces.
– Dried coconut can be replaced with makhana if desired.
